Flavour | 03 Oct 2017

Diogo Noronha opened last September 26th, in soft opening, Pesca restaurant, in Principe Real, Lisbon. With a signature cuisine and the sea in the spotlight, at Pesca the Portuguese fish is the big bet. Here, chef Diogo Noronha pays tribute to the national cuisine and welcomes the diversity of flavours between the sea and the mountain. Based on the principles of sustainability, consistency and innovation, at Pesca Restaurant we found seasonal and organic produce, and a careful selection of suppliers.
In a menu full of creativity, we can prove seared scallops with crunchy asparagus and sea and earth fennel, seared snapper with topinambur purée, grilled octopus with Aljezur’s sweet potato puree or braised mullet with low temperature egg. For dessert, with Claiton Ferreira’s signature, Sado’s sweet rice, chocolate Piura 65%, apple marmalade and Pistachio, Raspberry and Vanilla Pebbles. In the bar menu, signed by Fernão Gonçalves, we found unlikely ingredients like peppers, peas and carrots. Still in the bar, at the entrance, oysters do the honors, which can be enjoyed from noon to midnight.
